Let me start off by saying these are the best cupcakes on the planet. The best. The recipe below is adapted from my sister’s Strawberry & Cream Cupcakes. Hers are delicious. It’s just insane. I changed up a few of her ingredients so my son could have them and they were a total hit!
Word of warning though, the strawberries need to be splashed with sugar and sit overnight before you add them to the cupcakes. I only say that because a craving could hit you and I don’t want you to be disappointed if you go to bake them and realize you have to let them sit overnight. Not that I experienced that or anything…
I adapted this recipe to include strawberry extract, you can see the brand below. This gave it a double punch of strawberry but its completely optional.
