A family member made this for me once years ago and I absolutely loved it. Now, I can make it allergy friendly so my son can enjoy it too. Simply adjust the ingredients for your own personal allergies and preferences. This also makes a great party appetizer, it’s so easy to make and seriously, it’s a big hit. You won’t even realize you’re eating vegetables…which is a plus, in my opinion.
I used a Pillsbury Croissant crust (which contains only wheat) however, you can substitute it with a gluten free version or, I would actually recommend a “safe” thin bread. My son can have wheat and gluten so that was just an easy option for us. I used cucumber, tomato and shredded carrot as the vegetables but you can trade those out for something else if you prefer. This is incredibly customizable and delicious!

Tofutti is a soy based product, I don’t have my mayo on hand right now, but I do believe it contains soy too. 🙁
